Gluten, Egg Free Cookies

Here is a recipe I am trying tomorrow. I have a sweet friend that is so allergic to gluten. A batch will definately go to her. This is one of those recipes that you can use your imagination. I will be using Coconut oil instead of butter (because that is what is in the pantry); also instead of cow milk we have a few cans of coconut milk ….that will be used. I don’t have walnuts handy, useless my kiddos crack them *smile*…and I don’t like raisens in my cookies……so with that, here is the recipe.

3 med. very ripe bananas, mashed
1/3 c. butter
2 c. uncooked quick cooking oats
1/4 c. milk
1/2 c. raisens
1/2 c. walnuts
1 t. vanilla

Mix all till oatmeal is wet. Let sit for 5 minutes to soak in. Heat oven to 350 and bake 15-20 minutes on parchment paper, or well greased cookie sheets till lightly toasty!!
